Taco Soup

Very Good! Quick, Easy!
I didn’t think this had enough “color” or taste so I added an additional 6 to 8 ounce can of V8 juice (already listed in ingredients).

Ingredients

  • 2 pounds ground beef
  • 1 onion, chopped
  • 2 cloves garlic diced
  • 1 can whole kernel corn (do not drain)
  • 1 can pinto beans (do not drain)
  • 1 can kidney beans (do not drain)
  • 1 can Rotel tomatoes with green chilies (original flavor)
  • 1 6-8 ounce can V8 juice
  • 1 package dry taco seasoning mix
  • 1 package dry Hidden Valley Ranch "DIP" mix
  • 3 1/2 cups water

Directions

  1. Brown ground beef, onion and garlic together. (Drain only if necessary. The taco seasoning and Ranch Dip mix will thicken the liquid.)

  2. Stir in taco seasoning and Ranch DIP mix.

  3. Add all other ingredients.

  4. Bring to a slow boil. Turn heat down and simmer slowly for 30 to 45 minutes.

  5. You can serve with tortilla chips, soft tortillas or cornbread or just regular crackers. Also grated cheese, sour cream and jalapenos would be a great side addition if you wish.
