Wild Rice and Chicken Casserole

Finally tried this…it was sooo Good. I purchased a rotisserie chicken from the grocery and deboned it, made it so easy!

Ingredients

  • 1 6-oz. package Uncle Ben's Long Grain and Wild Rice
  • 1/4 cup butter or margarine
  • 1/3 cup onion, chopped
  • 1/3 cup flour
  • 1 tsp. salt (did not use as everything else had salt in it)
  • Dash black pepper
  • 1/2 teaspoon or less of minced garlic
  • 1 cup half & half (Probably canned milk would work)
  • 1 cup chicken broth
  • 2 cups cooked chicken, chopped (Used a grocery store rotisserie chicken, ended up with almost 4 cups of meat...we like meaty casseroles.)
  • 1/3 cup parsley, chopped
  • 1/4 cup toasted slivered almonds (this can be optional)

Directions

  1. Preheat oven to 425 degrees.

  2. Prepare contents of rice and seasoning packets according to package directions.

  3. Meanwhile, melt butter in large saucepan. Add onion and cook over low heat until tender. Stir in flour, salt and pepper. Gradually stir in half & half, garlic and chicken broth. Cook, stirring constantly, until thickened.

  4. Combine sauce with chicken, parsley, almonds and cooked rice.

  5. Place in lightly greased 2-quart casserole. Bake, uncovered, in 425 degree oven for 30 minutes.
