Chicken and Zuchinni Poppers

Haven’t tried.
Could be used as an appetizer…but thinking more like a salmon patty to be used as a main meal.

Ingredients

  • 1 pound ground chicken breast (think ground turkey would work)
  • 2 cup grated zucchini (think yellow squash would work if you don't have zucchini)
  • 2-3 green onions, sliced
  • 3-4 tablespoons cilantro, minced (maybe use parsley
  • 1 clove garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 teaspoon cumin, optional
  • olive oil, for cooking

Directions

  1. Toss chicken with squash, green onion, cilantro, garlic, salt, and pepper (and cumin, if using). Mixture will be quite wet.

  2. Heat a drizzle of olive oil in a medium pan over medium heat. Use a small scoop or a heaped tablespoon to scoop meatballs into the pan or form into patties. Cook for about 5-6 minutes on the first side. Flip and cook an additional 4-5 minutes, or until golden brown and the centers are cooked through.

  3. Serve with guacamole, salsa, or your favorite dip if using as an appetizer.
