String Cheese Chicken Roulade

Ingredients

  • 6 large chicken cuts, pounded flat
  • basil
  • 6 pieces string cheese (1 oz each)
  • 1/2 cup almond flour
  • 1/2 cup Parmesan cheese
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tsp Italian seasoning
  • 1 egg
  • 2-3 tbsp water
  • 2 cups marinara sauce, heated
  • 1 cup shredded Mozzarella
  • 1/4 cup Paremsan

Directions

  1. Preheat oven to 350F; lightly grease 9×13 dish

  2. In a shallow bowl, combing almond flour, Parmesan, pepper, salt, and Italian seasoning; in a separate bowl, beat egg with water

  3. Lay chicken cuts on a flat surface and sprinkle a small amount of basil on each one; place a piece of string cheese on each cut and roll tightly

  4. Gently dip each roll in egg wash and then into seasoning mixture until well-coated; place seam-side down in greased dish

  5. Bake 18-20 min until lightly browned; remove from oven and pour warmed marinara sauce around chicken, leaving tops exposed

  6. Sprinkle with remaining cheeses and bake 15-20 min until hot and bubbly

  7. Allow to set for 5-10 min before serving
