Chocolate Chip Brownie Bites

Ingredients

  • 1/2 cup butter, cut into 8 tbsp
  • 2 oz unsweetened chocolate, chopped
  • 1/2 cup unsweetened cocoa powder
  • 1-1/4 cup sugar
  • 1/4 tsp sea salt
  • 1 tsp vanilla
  • 1 egg
  • 3/4 cup flour
  • *1-1/2 cup flour
  • *1/4 tsp baking soda
  • *1/8 tsp baking powder
  • *1/2 tsp salt
  • *6 tbsp butter, softened
  • *1/4 cup brown sugar
  • *1/4 cup sugar
  • *1 egg
  • *1/2 tsp vanilla
  • *3/4 cup chocolate chips

Directions

  1. Preheat oven to 350; grease mini-muffin tin

  2. For brownie layer, in a large saucepan, melt together butter and chocolate; remove from heat when smooth

  3. Stir in cocoa powder, sugar, and salt; whisk in vanilla and egg until fully combined

  4. Stir in flour until just incorporated

  5. Spoon into muffin cups filling each halfway and spreading to cover bottom of cup (about 1 tsp each)

  6. For cookie layer (*), in a medium bowl, whisk flour, baking soda, baking powder, and salt

  7. In a large mixing bowl, beat together butter and sugars until creamy (about 2-3 min); beat in egg and vanilla

  8. Gradually beat in flour mixture

  9. Scoop cookie dough on top of each brownie (about 1 tsp each) and smooth to completely cover top

  10. Press 2-4 chocolate chips into the top of each bite

  11. Bake 10-12 min until cookies are golden and toothpick comes out very nearly clean; cool in pan 5 min before removing to cooling rack
