Rice Pilaf

Very good served with fish, seafood, chicken or pork.
This serves 4 people. Amounts can be increased for more servings.

  • 2 cups water
  • 2 chicken bullion cubes or beef (depends on what you are serving it with)
  • 1/2 cup frozen peas or peas & carrots
  • 1 jar sliced mushrooms, drained
  • 1 tablespoon fresh chopped parsley
  • 2 tablespoons margarine
  • 2 cups minute rice


  1. Place water, bullion cubes, peas, mushrooms, parsley and margarine in pan.

  2. Bring to boil, covered. Simmer 5 minutes.

  3. Return to boil and stir in rice. Return to boil, turn off heat, keeping lid on.

  4. Allow to sit on stove top covered for 5 to 8 minutes. Fluff and serve.
