Pepperoni Pizza Chicken Tenders

Ingredients

  • 30-35 small slices pepperoni
  • 1-2 lb chicken tenders
  • 4 tbsp (heaping) almond meal or almond flour
  • 1 tbsp minced onion
  • 2 tbsp (heaping) Parmesan cheese
  • 1/4 tsp salt
  • 1-1/2 tsp Italian seasoning
  • 1 egg

Directions

  1. Preheat oven to 400 and line a baking sheet with parchment paper or foil

  2. Place pepperoni slices in a single layer and bake for 7 min until crisp; remove from oven and allow to cool

  3. Crush pepperoni cups and mix with almond meal, onion flakes, Parmesan, and salt; spread onto a plate or shallow bowl

  4. Beat the egg in a small bowl; dip chicken pieces in egg and dredge through pepperoni mixture

  5. Bake 15-20 min until cooked through
