Pie Crust II

Ingredients

  • 2 cups flour
  • 1 cup real butter unsalted, cut into tables pin size pieces
  • 1 egg
  • 1 tablespoon whipping cream
  • 1 teaspoon salt

Directions

  1. With metal blade in place, add flour, butter, egg, cream and salt to beaker of food processor.

  2. Process, turning on and off rapidly for 15 seconds.

  3. Continue processing until ball of dough forms on blades.

  4. Chill 39 minutes.

  5. For a very flaky crust, roll pastry into a rectangle approximately 16 × 18 inches, then fold in thirds as you would a letter. This is the same folding as used in classic puff pastry making.

  6. Repeat, rolling out and folding into thirds 2 more times. Chill at least 1 hour before using.

  7. Makes 2, 9 inch pie shells.
