Creamy Tomato and Pesto Tilapia

  • 4 cloves garlic, crushed or to taste
  • 1 can diced tomatoes
  • 5 tablespoons sour cream
  • salt and pepper to taste
  • 4-5 tsp pesto sauce
  • 4 tilapia fillets


  1. Lay tilapia on baking sheet and salt and pepper

  2. Spread thin layer of pesto and about a tablespoon of tomatoes onto fish

  3. Cook on 350 for 12-15 min

  4. While fish is cooking combine sour cream, 2-3 tablespoons pesto and remainder of can of tomatoes into small sauce pan

  5. heat through and serve over rice with baked fish
