Low Carb Green Bean Casserole

Ingredients

  • 1 lb fresh green beans (cleaned, trimmed, and halved) OR frozen cut green beans
  • 8 oz mushrooms, roughly chopped
  • 2 tbsp butter
  • 3 tsp minced garlic
  • 1/2 cup chicken stock or broth
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese (grated)
  • 3 oz french fried onions

Directions

  1. In a large pot, blanch green beans then shock them in an ice bath; drain and set aside

  2. In a skillet over medium heat, saute mushrooms and garlic in butter for 5 min

  3. Add chicken stock and heavy cream; bring to a boil over medium heat then reduce to low and simmer until thickened slightly

  4. Stir in Parmesan cheese; add green beans and stir until coated

  5. Transfer to a greased casserole dish and top with french fried onions

  6. Bake at 400F for 15 min
