Buffalo Chicken Noodle Bake

Can be made with spaghetti squash noodles or zucchini noodles

Ingredients

  • 1 lb chicken, cooked and chopped
  • 3 cups spaghetti squash noodles (about 1/2 squash)
  • 1 stalk celery, chopped
  • 1-1/2 tbsp Parmesan cheese
  • 1/2 cup sour cream
  • 1 tbsp butter
  • 1 tbsp red pepper hot sauce
  • 3 tbsp canned pumpkin
  • 1/2 tsp ground mustard
  • 1/4 tsp garlic powder
  • 1/3 cup shredded Cheddar cheese

Directions

  1. Preheat oven to 400* and grease a 2 quart casserole dish

  2. In a medium sauce pan over medium heat, combine butter, sour cream, hot sauce, pumpkin, mustard, garlic powder, and Parmesan; melt all ingredients and mix until combined

  3. Remove excess liquid from squash noodles; place in prepared dish

  4. Place chicken on top of noodles; pour sauce over chicken in dish

  5. Bake at 400* for 30 min; remove and top with cheddar cheese

  6. Serve when cheese has melted
