Shrimp and Quinoa salad

This is for a single serving, double it for an easy dinner for two. 12 ww+ points

Cook time: 15 minutes

  • spring mix or baby greens
  • 5 or 6 shrimp
  • lemon or lime juice
  • salt and pepper
  • 1/2 cup cooked quinoa
  • creole or cajun seasoning
  • 1/2 mango
  • 1/2 avocado
  • chicken broth
  • green onion
  • cilantro *optional
  • olive oil
  • canola oil spray


  1. cook quinoa using chicken broth instead of water in a pot or in a rice cooker

  2. put shrimp in a baggie with a little olive oil and cajun/creole seasoning and shake to coat

  3. saute shrimp until white in the middle

  4. chop mango, avocado and mix with quinoa and greens

  5. top with green onion and cilantro and sprinkle salt, pepper and lemon or lime juice to taste
