Breakfast Quesadillas

Can be lower carb with high-fiber tortillas.
Use whatever breakfast fillings you choose.
Homemade tortillas do not hold together for this!


Prep time: 10 minutes
Cook time: 10 minutes
Serves 2 people

  • 2 flour tortilla shells
  • 1 T. butter
  • 2 hard boiled eggs, diced
  • 1/2 c. ham, diced
  • 1/2 c. grated Swiss cheese
  • 1/2 c. grated cheddar cheese
  • mushrooms, sauteed
  • onions, sauteed
  • bacon, sauteed


  1. Melt butter in a skillet over medium heat.

  2. Lay one tortilla shell to skillet.

  3. Sprinkle grated Swiss cheese on tortilla.

  4. Sprinkle diced eggs and ham over cheese layer.

  5. Next, sprinkle any other optional toppings.

  6. Add layer of cheddar cheese.

  7. Top with remaining tortilla.

  8. As soon as the bottom tortilla is golden brown, flip the whole quesadilla over.

  9. Continue cooking until second side is golden brown.

  10. Remove to a cutting board. Cut into wedges.

  11. Serve warm!
