The best Broccoli Noodle Soup

Ingredients

  • 1 bag of frozen broccoli or 1 head of fresh broccoli
  • 2 cups chicken broth or water
  • 2 cups spaghetti, linguine or angel hair past, broken
  • 1/4 cup olive oil
  • Parmesan cheese, grated (optionla)

Directions

  1. Cut broccoli into bite-sized pieces if needed. Boil broth or water and add broccoli. Cover and cook 5 minutes. Add spaghetti and cook, uncovered, until al dente. Remove from heat and add olive oil. Stir, cover and let stand a few minutes. Serve topped with freshly grated Parmesan cheese. (Similar to a Top Ramen, very little broth.)
