Spinach and Artichoke Dip Casserole

Ingredients

  • 4 cups cauliflower
  • 1/4 cup butter
  • 1/2 cup heavy whipping cream
  • 8 oz cream cheese
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/4 nutmeg
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1 cup frozen spinach
  • 1 can artichoke hearts, drained and chopped
  • 1-1/2 cup shredded Mozzarella cheese
  • 1/4 cup Parmesan
  • 2-3 cups chicken, cooked and cut

Directions

  1. Combine cauliflower, butter, whipping cream, cream cheese, salt, pepper, nutmeg, garlic powder, and paprika in a sauce pan and simmer on the stove until cauliflower is fork tender

  2. Add spinach, artichoke hearts, 1 cup Mozzarella, and Parmesan to the sauce pan and stir to combine

  3. Mix in chicken

  4. Spoon the mixture into a greased casserole dish and top with remaining Mozzarella cheese

  5. Bake at 400F for 20 minutes until golden and bubbling
