Allergy-free “mac & cheese”

Ingredients

  • 2 cups of corn maccaroni pasta (may use quinoa or rice pasta)
  • 2 TBS of olive oil (may use canola or safflowe oil)
  • 2 TBS rice flour (may use corn, or arrowroot starch)
  • 1 cup of Rice milk (may use plain soy milk)
  • 1/2 to 1 tsp or Tumeric powder (optional, adds yellow color)
  • 1/4 to 1/3 cup of vegan gourmet mozzarella cheese alternative (optional)
  • salt to taste

Directions

  1. cook pasta as directed on pacakge, drain and rince.

  2. Heat oil, when oil is hot, remove pan from heat and add rice flour.

  3. Mix well until flour is completely absorbed by oil.

  4. Return to heat and add 1 cup of milk.

  5. Stir continuously until thinken.

  6. Remove from heat and add tumeric and cheese if desired.

  7. Season with salt to taste.
