Mexican Chicken Soup

  • 1-1/2 lbs boneless, skinless chicken
  • 2 cups chicken broth
  • 1 jar salsa (15-16oz)
  • 8 oz shredded cheese of choice


  1. Layer chicken pieces in the bottom of the crockpot

  2. Pour chicken broth, salsa, and cheese over chicken

  3. Cook on LOW 6-8 hours or HIGH 3-4 hours

  4. Shred chicken and serve
