Blackened Catfish

I combined several recipes taking what I liked out of each. My kids asked for the recipe so I guess it was good

Ingredients

  • 4 catfish filets
  • 2 tablespoons paprika
  • 1 tablespoon Cajun Seasoning
  • 2 teaspoons sugar
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley (I use fresh if I have.)
  • 1 teaspoon kosher salt (I didn't have so just used regular salt.)
  • 1 heaping tablespoon fresh oregano leaves chopped (I chopped mine from the garden the night before and let them just air dry, then added to the rest of the spices. After they dried it ended up being like 1 teaspoon.)
  • Vegetable oil as needed.

Directions

  1. You need to do this outside because it will smoke quite a bit and set off your smoke alarms!

  2. Mix spices together. Rub into one or both sides of fish filet. Set aside.

  3. Heat the vegetable oil in a large cast iron skillet over high heat until almost smoking.

  4. Lay 2 fillets in the skillet and cook until deep golden brown and starting to turn black 3-5 minutes depending on the thickness of the fish.

  5. Flip and cook another 3-5 minutes.

  6. Remove to a baking sheet or platter and place in the oven to keep warm. Repeat with the remaining fillets, adding more vegetable oil if necessary.
