Hot Cocoa Pancakes

Use up the extra Hot Chocolate mix/packets leftover from the Holidays! From Delishably with my tweaks of course. If you don’t want to mix up your own vanilla yogurt, get something like a Chobani vanilla yogurt -less sugar.

Ingredients

  • 3/4 C all purpose flour
  • 3/4 C whole wheat pastry flour
  • 1/4 C almond flour, fine ground
  • 2 ounces Dark Chocolate hot cocoa mix, (2 individual serving packets)
  • 1 T dairy whey protein powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 C mini semi-sweet chocolate chips (opt.)
  • 1 cup milk
  • 2 tablespoons sugar (sucanat)
  • 3 eggs, large
  • 4 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 6 ounces plain yogurt
  • 2 t sucanat
  • 1/2 t vanilla

Directions

  1. In a large mixing bowl, mix up the plain yogurt, 2 t sucanat and 1/2 t vanilla. Set aside and gather other ingredients.

  2. Add to the yogurt in the large mixing bowl, milk, 1t vanilla, 2T sucanat, melted butter, and eggs. Mix well.

  3. In a medium mixing bowl combine the flours, hot chocolate mix, salt, baking powder, and baking soda, mini chocolate chips and dairy whey. Mix well.

  4. Add the dry ingredients to the wet ingredients in the large mixing bowl. Mix only until combined. Don’t over mix

  5. Pour batter onto hot griddle (300° F) to form pancakes. Flip when bubbles have popped, tops are no longer “wet,” and sides are beginning to brown. (cook according to your griddle/your preference -every griddle is different even if temp controlled)

  6. Cook other side until golden brown and remove.
  7. Serve with Maple syrup or whipped cream (redi-whip!) or your favorite way.
