Deconstructed Shrimp Kabobs

This was a ton better than regular Kabobs…much less mess, less poking yourself with the wooden skewers. Lots of times I have trouble with mushrooms and pineapple splitting when I try to put on skewers…Not with this method! Oh…hubby loved it!

Ingredients

  • 1 pound shrimp peeled and deveined
  • 1 Green Bell pepper cut into about 2 inch squares
  • 1 Red or any other color Bell pepper cut into about 2 inch squares
  • 1 & 1/2 Onion cut into quarters
  • 1 box mushrooms
  • 1 box fresh pineapple
  • -
  • Marinade: I sort of eyeballed the ingredients and just mixed up something that might taste good!
  • I started with 1 cup olive oil, added assorted spices...Old Bay, Garlic Powder, Brown Sugar, Paprika, Tony Cacherys Cajun Seasoning, Seasoning Salt and a little minced parsley.

  • And you will need a grill thing that is sort of like a square metal bowl. Mine has holes and has sides that angle up.

Directions

  1. Place your grill bowl on a baking sheet. Toss all the cut up veggies into the bowl.

  2. Drizzle some of the marinade over the vegetables and toss…use about 1/2 of the marinade.

  3. Have your cleaned shrimp (peeled and deveined) in a bowl in the fridge. Pour remainder of the marinade over the shrimp, stir, place back into fridge.

  4. Place veggie bowl on heated grill and sort of stir-fry until the veggies are about 2/3 done.

  5. Take shrimp out of marinade and toss into the veggies…cook until shrimp is done, tossing veggies and shrimp together!

  6. Hubby wanted a baked potato as a side…we just cooked one potato and split it because the shrimp and veggies was so good!
