Eggroll in a Bowl

(from cokerlj’s recipe box)

This came from my son-in-law. To be made on a Blackstone Grill. I don’t have one so I used a large skillet on my stove top.
I also edited amounts and ingredients to my liking.

Ingredients

  • 1 pound ground Pork Sausage
  • 2 bags Dry Coleslaw mix...the shredded kind
  • 1/2 large onion chopped
  • 2 cloves garlic minced
  • 1 can sliced water chestnuts cut up a little more
  • 2 tablespoons Sesame Oil
  • 3 tablespoons rice vinegar
  • Soy Sauce, Teriyaki Sauce, Salt, Pepper all to taste.
  • Optional some cooked rice...really adds to the flavor and gives the dish some body. Even better if you could do a little stir-fry with the rice.

Directions

  1. Cook sausage until done. Drain. Set aside in another bowl.

  2. Add oil to the skillet and dump in coleslaw, onion, water chestnuts and garlic to the cabbage.

  3. When slaw mixture starts to wilt, add the sesame oil, rice vinegar and a splash of Soy Sauce.

  4. Once the cabbage is cooked, toss in the pork and cook until most of the moisture is cooked out.

  5. We served with some Fried Eggrolls from a lady who runs a seafood market!
