Luby’s Style Baked Fish

My Version!
It is wonderful, hubby requests this all the time. Can be served with Rice Pilaf and Lemon-Butter Cream Sauce

Ingredients

  • 2-3 medium fish filets
  • Cajun seasoning
  • salt
  • flour
  • olive oil
  • Helman's Mayo
  • 2 tablespoons fresh minced parsley
  • 1/2 cup crushed up Ritz or Club Crackers
  • 1/4 stick melted butter
  • 1 tablespoon additional minced fresh parsley

Directions

  1. Check filets for fine bones. Season fish with light sprinkle of Cajun seasoning and a little salt. Dredge in flour.

  2. Brown the fish in just a little olive oil. Didn’t really cook all the way thru. Place filets on a pan.

  3. Mix in the 2 tablespoons parsley into the mayo. Spread mayo on the top of the fish about 1/4 inch thick.

  4. Place the filets under the broiler and brown/cook until fish is done.

  5. Crush the crackers up, mix in melted butter and additional minced parsley and put the crumble on top of the mayo.

  6. Place back under the broiler until the crackers are just browned.
