Ingredients
- 2-3 medium fish filets
- Cajun seasoning
- salt
- flour
- olive oil
- Helman's Mayo
- 2 tablespoons fresh minced parsley
- 1/2 cup crushed up Ritz or Club Crackers
- 1/4 stick melted butter
- 1 tablespoon additional minced fresh parsley
Directions
-
Check filets for fine bones. Season fish with light sprinkle of Cajun seasoning and a little salt. Dredge in flour.
-
Brown the fish in just a little olive oil. Didn’t really cook all the way thru. Place filets on a pan.
-
Mix in the 2 tablespoons parsley into the mayo. Spread mayo on the top of the fish about 1/4 inch thick.
-
Place the filets under the broiler and brown/cook until fish is done.
-
Crush the crackers up, mix in melted butter and additional minced parsley and put the crumble on top of the mayo.
-
Place back under the broiler until the crackers are just browned.
