Shrimp ’en Brochette

This was soo good! Very tedious to make but worth it. Similar to Pappasito’s Shrimp Brochette.

Ingredients

  • 1 Pound XL Shrimp
  • 1 pound Thinly sliced Bacon
  • 2 Fresh Jalapeno
  • Block of Monterey jack cheese
  • 1 Tablespoon Cajun seasoning powder
  • 1 Tablespoon Paprika
  • 1 Tablespoon Old Bay seasoning
  • 1/2 stick butter
  • 1/4 cup white wine
  • Wooden toothpicks soaked in water

Directions

  1. Peel and devein shrimp, leaving tails on. Butterfly slice each shrimp. Place in fridge.

  2. Prep other ingredients: Mix together Paprika, Cajun seasoning, Old Bay, melted butter, wine. Pour this mixture over Shrimp, allow to marinate while you ….Cut bacon in half, length wise; Clean seeds and membranes out of the Jalapenos, slice each jalapeno into thin slices; Slice cheese into matchstick size pieces the same length as the jalapenos.

  3. Build your Shrimp Brochette….Take a butterflied Shrimp, lay it on thar half piece of bacon; Place a slice of Jalapeno and a slice of cheese into the center of the butterflied Shrimp; Roll up into the bacon leaving tail exposed. Secure with the water soaked toothpick.

  4. Grill until the bacon is crispy and done.

  5. Serve with Garlic Butter Shrimp and/or Mayo, Mustard-Lime Dipping Sauce (recipes in this book)
