InstaPot Shrimp Boil

Haven’t Tried but sounds quick and easy. Could probably toss in some Crab Legs too.

Ingredients

  • 1 pound Shrimp
  • 1-2 clusters Crab Legs (optional)
  • 0.75 pound Sausage, sliced in circles
  • 1 1/2 cup water
  • 4 small new potatoes, cut up
  • 2 ears corn, cut in quarters
  • 1 bay leaf
  • 1 onion chopped
  • 1 Tablespoon Old Bay Seasoning
  • 1 lemon for serving
  • Salt to taste.

  • Optional Ingredients that I like to add: 1 beer,
  • several Parsley stems with leaves, tablespoon Paprika, sprinkle of Cayenne pepper, Couple cloves of garlic peeled. Melted butter to serve.

Directions

  1. NOTES: It is recommended that you do not peel the potatoes. The skin helps hold them together which makes serving easier. That’s why it is recommended you use new potatoes with a thin skin for a more pleasurable eating experience. Chop the potatoes and sausage in fairly large pieces that you can easily pick up with your hands, but ideally, they can still be eaten in one bite, around 1 1/2 inches is perfect.

  2. Place potatoes and onion into the InstaPot and add water and beer. Also stir in Bay leaf and Old Bay Seasoning.

  3. Close the lid and cook at high pressure for about 3 minutes. When cooking is complete, do a quick pressure release.

  4. Add sausage, corn, shrimp and any or all of the Optional ingredients including Crab Leg Clusters.

  5. Cook at high pressure for 2 minutes. When cooking time is complete, do a quick pressure release.

  6. Open the lid, add lemon slices and serve with your favorite butter dip!!!
