- cornstarch mixed with 1 3/4 Tbsp. water

- instant lemon pudding mix
- Glaze:
- confectioners' sugar

Made with fresh pineapple
- Topping:
- unsalted butter
- packed light brown sugar
- Batter:
- all-purpose flour
- baking powder
- salt
- granulated sugar
- large eggs
- vanilla
- dark rum
- unsweetened pineapple juice
- dark rum for sprinkling over cake
NOTE: Please be careful, this first stage can get hot.

This recipe makes a wonderful, thick cheesecake. Mine took longer than the recommended 35-45 minutes… about 20 minutes longer, as a matter of fact. No matter, though, this one’s worth every extra minute.
