Sweet Onion Pizza

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 large Spanish or Vidalia onions, thinly sliced
  • 1 tablespoon sugar
  • 1 package all-ready pizza crust
  • 1 container part skim ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup shredded part-skim mozzarella cheese

Directions

  1. Preheat oven to 450 degrees. Grease a baking sheet.

  2. Heat butter and oil in a large skillet over medium high heat. Add onions and sugar and saute for 15 miuntes, or until onions are caramelized, stirring frequently.

  3. Unroll pizza crust on prepared baking sheet. Press dount into a 15 by 10 inch rectangle.

  4. In medium bowl, combine ricotta and Parmesan. Sprinkle mozzarella over dough; cover with ricotta mixture.

  5. Bake on bottom rack of oven for 15 to 20 minutes, or until crust is browned.

  6. Top with caramelized onions.
