Quick and Easy Veggie Tortellini Soup

An inexpensive, easy soup with lots of flavor and healthy veggies.

Prep time: 10 minutes
Cook time: 30 minutes
Serves 6 people

Ingredients

  • 1 package fresh or frozen cheese tortellini
  • 8 cups vegetable stock
  • 2 cans diced tomatoes
  • 2 small zucchini, chopped
  • 1 cup mushrooms, chopped
  • 3 medium carrots, sliced
  • 1 bunch fresh basil, chopped
  • 2 cloves garlic, pressed
  • Salt (optional)

Directions

  1. Pour stock into large pot. Add tomatoes with juice, zucchini, mushrooms, carrots, basil and garlic.

  2. Bring to a boil, reduce heat, and simmer until vegetables are cooked to almost desired tenderness.

  3. Bring soup back to a boil, add tortellini and cook for 3-5 minutes until both pasta and vegetables are tender.
