  • 2 cup water
  • 1 cup organic quinoa rinsed
  • 1 cup organic chopped fresh parsley
  • 1/2 cup organic chopped fresh mint leaves
  • 1/2 cup finely chopped organic spring onions
  • 3 organic tomatoes, finely diced
  • 2 organic cucumbers, seeded and diced
  • 3 tablespoons extra virgin organic olive oil
  • 3 tablespoons organic lemon juice, or to taste
  • 1 teaspoons macrobiotic sea salt


  1. n a saucepan bring the water to the boil. Add the quinoa and a pinch of salt. Turn heat to low and simmer the quinoa for around 15 mins. Remove from heat and allow to cool to room temperature, fluff it with a fork.

  2. In the meantime combine the rest of ingredients. When quinoa is ready, allow to cool and toss with the rest of the ingredients, dress with combined olive oil, lemon juice and salt
