Green Bean Potato Soup

Herbs de Provence can be purchased at any gourmet food store. It is a combination of many herbs – rosemary, thyme, marjoram, etc. You can use any of these separately as a substitute.

Ingredients

  • 4 Tbs butter
  • 5 stalks celery, chopped
  • 5 carrots, chopped
  • 1 bunch green onions, chopped
  • 1 small onion, chopped
  • 3 Tbs flour
  • 2 quarts of water
  • 2 cups powdered milk
  • 3 medium sized potatoes, peeled and diced
  • 1/4 tsp salt
  • 1/4 tsp ground white pepper
  • 1/2 cup chopped parsley
  • 1 Tbs Herbs de Provence
  • 1 1/2 cup sour cream
  • 1 (10 0z) package frozen French-style green beans

Directions

  1. Melt the butter in a 6 quart stockpot. Saute the celery, carrots, and onions for 15 minutes. Stir in the flour. Gradually stir in the water and the powdered milk. Cook over heat until thickened, about 10 minutes. Add the diced potatoes, salt, pepper, parsley, and Herbs de Provence. Simmer, stirring frequently, until all the potatoes are tender, about 30 minutes. Stir in the sour cream, blending well. Add the green beans. Simmer for 20 more minutes. Serve.
