Slow-Cooker Quesadillas

Prep time: 5 minutes
Cook time: 15 minutes
Serves 8 people

Ingredients

  • 4 chicken breasts (can be frozen)
  • 1 can (15oz) diced tomatoes
  • 1 can (4oz) diced green chiles
  • 4 oz cream cheese
  • tortillas
  • shredded cheese
  • butter

Directions

  1. Place chicken in crockpot; add in tomatoes, chiles, and cream cheese

  2. Cook on LOW 6-8 hours or HIGH 3-4 hours; once chicken is done, shred it with forks

  3. To make quesadillas, warm skillet over med heat; add butter

  4. Using a slotted spoon (to drain juices), place chicken on tortillas and top with shredded cheese; cook until warmed through and golden brown
