Dutch Oven Peach Cobbler

(from cokerlj’s recipe box)

I like more “crust” or “dough”…you can add an extra box of cake mix and the same amount of other ingredients and it will still work and it will serve a few more people.

Ingredients

  • 3 large cans sliced peaches
  • 1 box yellow cake mix
  • 1 stick margarine
  • 1/2 cup sugar (optional, I think this makes it too sweet)
  • cinnamon

Directions

  1. Line dutch oven with foil and preheat.

  2. Dump in all three cans of peaches, juice and all. (Stir in half of the sugar at this time…optional.)

  3. Sprinkle entire box of cake mix(s) over the peaches. The cake mix should be dry, no eggs or anything else.

  4. Cut up one stick of margarine and place around on top of the dry cake mix.

  5. Sprinkle the remainder of the sugar (again, optional.)

  6. Sprinkle with cinnamon.

  7. Cover. Place very close to fire.

  8. Place over 10-12 coals. Put 14-16 coals on top of lid.

  9. This will take about 45 minutes to cook. You will want to check it after about 30 minutes and probably turn it around or rotate it so the other side is close to the fire.
