Mom’s Rice Pudding

Haven’t tried.
I don’t know who “Mom” is! Husband got this recipe at a Boy Scout Camp Out.

Ingredients

  • 1 cup uncooked rice
  • 1 quart milk
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoons vanilla
  • 1/3 cup raisins (optional)
  • cinnamon as needed

Directions

  1. Cook rice until soft.

  2. Beat eggs, sugar, vanilla and milk together.

  3. Mix rice and egg/milk/sugar mixture together. Add raisins if desired. (I would use golden raisins.)

  4. Pour into a glass oven proof baking dish.

  5. Bake at 350 for about 45 minutes. A “skin” will form on top during baking, stir under and continue cooking until thickness desired.

  6. Near the end, sprinkle with cinnamon.
