Edwins Rice Pudding

  • 5 cups milk
  • 3/4 cup uncooked rice
  • 3 eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla


  1. TIP: I don’t see why you couldn’t stir in some golden raisins or sprinkle top with cinnamon near the end of cooking.

  2. Place milk over heat stirring continuously.

  3. When milk appears scalded, set aside 1/2 of it.

  4. Cook rice in the other 1/2 of the milk until tender, about 12 to 15 minutes, stirring.

  5. Beat eggs well, add sugar, salt and vanilla and stir into scalded milk. Pour this mixture into cooked rice and stir well.

  6. Pour into greased baking dish and cook about 55 minutes at 325 degrees.
