Cherry Pie

Old farm recipe. Mother would always make this in February for George Washington’s birthday and she also liked the red for Valentines. (Remember…George couldn’t tell a lie and admitted to chopping down a cherry tree!)

Ingredients

  • 2 cans tart water packed cherries
  • 1 cup sugar heaping
  • 3 tablespoons minute tapioca heaping
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 10 inch unbaked pie crust (a standard 9 inch pie pan is just a bit too small)
  • red food color (optional)

Directions

  1. Mix sugar and cherries together.

  2. Add tapioca, vanilla and salt. Also optional red food color if you want a really red filling.

  3. Pour into 10 inch pie crust.

  4. Add lattice-work pie crust top or solid top with air vents.

  5. Place on a pizza pan to avoid spill-overs.

  6. Sprinkle top with extra sugar.

  7. Bake at 350 degrees for 1 hour or until it bubbles and top is golden.

  8. Cool to set tapioca and serve with a scoop of ice cream.
