Low Carb Peanut Butter Chocolate Chip Blondies

Ingredients

  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup peanut butter
  • 1/4 cup butter, softened
  • 1/2 cup swerve sweetener
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 tsp liquid stevia
  • 1/2 cup sugar free chocolate chips

Directions

  1. Preheat oven to 325* and grease an 8×8 pan

  2. In a medium bowl, whisk together almond flour, baking soda, and salt

  3. In a large bowl, beat peanut butter, butter, and swerve until smooth

  4. Beat in eggs, vanilla, and stevia until well combined

  5. Beat in dry mix until well incorporated; stir in chocolate chips

  6. Spread mixture in prepared pan and smooth down

  7. Bake 15-20 min until top is lightly browned and just set

  8. Remove and cool at least 25 min before cutting and serving
