Katie’s German Apple Pancakes

Ingredients

  • 1 cup pastry flour (just regular all purpose flour, sifted then measured carefully)
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 2-3 eggs
  • 3/4 to 1 cup milk
  • 1 teaspoon vanilla
  • diced apple

  • Vanilla ice cream

Directions

  1. Mix first seven ingredients well.

  2. Fry—traditionally, these are done in a heavy skillet with lots of oil. You can do a nonstick pan version, but the next step really relies on that fat.

  3. Roll in a sugar/cinnamon mixture. Serve with a big scoop of vanilla ice cream.

  4. This makes about 6 pancakes. You can double or more this recipe depending on the number of people. As with all pancakes, it’s the cooking that’s time-consuming. As these are best piping hot out of the pan, this works best at a social gathering where everyone eagerly awaits their turn. Keep the coffee flowing.
