Stuffed Pizza Bread

Ingredients

  • 3 tbsp coconut flour, sifted
  • 1/2 tbsp flax meal
  • 3 eggs, beaten
  • 3 tbsp almond milk or heavy cream
  • 2 tbsp butter or coconut oil, melted
  • 1 tsp baking soda
  • 2 tsp apple cider vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp Italian seasoning
  • 1/2 cup pizza sauce
  • 12 (or more) slices pepperoni
  • 1/2 cup Mozzarella cheese
  • 1/2 tbsp Parmesan cheese

Directions

  1. Preheat oven to 375; prepare loaf pan with cooking spray

  2. In a small pinch bowl, combine baking soda and apple cider vinegar

  3. In a large bowl, combine coconut flour, flax meal, eggs, almond milk or heavy cream, melted butter or coconut oil, vinegar mix, garlic powder, and Italian seasoning; mix thoroughly to break up clumps

  4. Pour half of the bread batter into prepared pan; bake 8 to 10 min

  5. Remove bread from oven and allow to cool until safe to touch

  6. Top bread dough with pizza sauce, pepperoni, and half of the Mozzarella

  7. Pour remaining bread batter on top and spread smooth; sprinkle with Paremesan

  8. Bake 16 to 20 min longer until center of bread is firm

  9. Remove from oven and sprinkle with remaining Mozzarella while it cools
