Greek Spinach Soup with Orzo

I used small elbows instead. Serve with homemade garlic bread, or toasted pitas.

Ingredients

  • 1 1/2 TBS olive oil
  • 1 cup chopped white onion
  • 2-3 garlic cloves, minced
  • 3/4 cup elbow pasta
  • 8 cups chicken broth
  • 1 14 oz can petite diced tomatoes with their juice
  • 6 - 8 oz fresh spinach, washed, stemmed, chopped
  • 1/4 cup chopped parsley or dill or combination
  • Juice of 1 lemon ( I used 1/2 lemon)
  • Salt & Lemon Pepper

Directions

  1. Heat the oil in a soup pot. Add the onion and saute over medium heat until translucent (about 5 minutes) then add garlic and saute for another 5 minutes or until the onions turn golden.

  2. In the meantime, cook the pasta and drain.

  3. Add the stock and diced tomatoes to the soup pot. Bring to a simmer, simmer for 10 minutes.

  4. Add the cooked orzo to the soup, and spinach and the herbs. Stir in the lemon juice and season with salt and lemon pepper.
