Maple Sausage Pancake Muffins

Ingredients

  • 6 oz. Ground Sausage
  • 1 1/2 cups Almond Flour
  • 4 large Eggs
  • 4 tbsp. Coconut Milk
  • 4 tbsp. Maple Syrup
  • 1 tsp. Vanilla Extract
  • 1 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 20 drops Liquid Stevia
  • 1/4 cup Erythritol

Directions

  1. Break sausage into small chunks and brown in a skillet until almost cooked

  2. Whisk together eggs, coconut milk, syrup, and vanilla, and liquid stevia until well distributed

  3. Mix together almond flour, baking powder, salt, and erythritol; stir into the wet ingredients and mix well

  4. Stir in sausage chunks and pour batter into 12 greased muffins cups

  5. Bake at 350F for 20-25 min; allow to cool 5 min before removing from pan

  6. Serve with more syrup
