Mini Breakfast Pizzas

Use whatever breakfast meats you like as toppings

Serves 6 people

  • 1-1/2 c. Shredded mozzarella cheese
  • Italian seasoning
  • Garlic powder
  • 3/4 c. Almond flour
  • 1 egg
  • 2 Tbsp. Butter melted
  • *2 eggs
  • *1/2 cup mozzarella


  1. In a microwave safe bowl, melt mozzarella and seasonings; heat in 1-2 minute intervals until completely melted and gooey

  2. Add all other ingredients and mix together well (using hands or a wooden spoon)

  3. Press dough into greased muffins tins; bake at 425F for 10-12 min

  4. Meanwhile, mix together eggs and mozzarella for the topping

  5. Spoon over each mini pizza crust and top with favorite breakfast meats; cook 5-7 min longer until egg is fully cooked
