Almond Flour Chocolate Chip Cookies

Ingredients

  • 3 Cups Almond Flour
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda
  • 1/4 Cup Oil
  • 2 Eggs
  • 1/2 Cup Sweetening Syrup, such as Davinci’s (OR 1 Cup Granulated Sweetener like Splenda)
  • 1/2 cup splenda
  • 10 drops Stevia (to taste)
  • 3 Teaspoons Vanilla Extract
  • 2/3 Cup Chocolate Chips
  • 1 Cup Chopped Walnuts or Other Nuts (Optional)

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Line a baking sheet with parchment paper.

  3. In a medium bowl, whisk together the dry ingredients (flour, salt, baking soda, splenda).

  4. In a separate bowl, combine the oil, egg, stevia, sweetening syrup, and vanilla extract, stirring to combine.

  5. Add the wet ingredients to the dry ingredients and stir until well-combined.

  6. Gently fold the chocolate chips and walnuts (if using) into the dough.

  7. Drop tablespoonfuls of dough onto the baking sheet.

  8. Bake the cookies for 10-12 minutes or until they are golden brown. Let cool for 5-10 minutes.
