Turkey Meat Loaf

Any day rotation diet meat loaf

Serves 4 people

Ingredients

  • 1 lb ground turkey or ground meat of choice
  • 1/4 cup milk substitute of choice
  • 1 egg (optional)
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrot
  • 1/2 cup minced parsley or cilantro
  • 1/4 cup finely chopped celery
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Preheat oven to 350 degrees. Put all ingredients into a medium mixing bowl. Mix together very well. Using your hands is the most efficient method — just mix and squeeze and enjoy it. Grease a 9×5-inch loaf pan, pat the mixture into it, and bake for 1 hour. Drain off the extra juices, slice, and serve.

  2. Variation for rotation days:

  3. Day 1: Use potato in loaf. Serve with mashed potatoes, mushrooms and asparagus. Pineapple slices

  4. Day 2: Use over cooked broccoli and cauliflour instead of carrots and celery. Serve with broccoli and cauliflour and mashed Rutabagas and turnips. Grapes or raisins.

  5. Day 3 :spinach raw or cooked, carrot and pernips mashed or sliced, Beet

  6. Day 4: use sshedded zucchini and yellow squash in loaf instead of carrots. Serve with mashed winter squash, zucchini slices, peach or apricot slices.
