Chocolate Peanut Butter Fudge Cake

Buttermilk alternative:
1 tsp white vinegar plus enough milk to make 1 cup
Allow to sit for 10 minutes

Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 1 tsp baking soda
  • 2 sticks butter
  • 4 tbsp cocoa powder
  • 1 cup water
  • 1/2 cup buttermilk
  • 2 eggs, beaten
  • 1 tsp vanilla
  • *1.5 cup smooth peanut butter
  • *1.5 tbsp oil
  • **1 stick butter
  • **4 tbsp cocoa powder
  • **6 tbsp buttermilk
  • **16 oz powdered sugar
  • **1 tsp vanilla

Directions

  1. Combine sugar, flour, and baking soda in a large bowl and set aside

  2. In a medium saucepan, bring to a boil 2 sticks butter, 4 tbsp cocoa powder, water, and 1/2 cup buttermilk

  3. Stir in beaten eggs and vanilla then combine with dry mixture

  4. Pour into greased 15×10×1 jelly roll pan and bake at 350* for 25 minutes; cool completely in pan

  5. For peanut butter layer (*), mix together peanut butter and oil then spread over cooled cake

  6. For fudge frosting (**), bring to a boil 1 stick butter, 4 tbsp cocoa powder, and 6 tbsp buttermilk

  7. Pour over powdered sugar and add vanilla; stir well

  8. Spread evenly over peanut butter layer on cake
