Mexicali Meatloaf

Ingredients

  • 1 lb ground beef
  • 1 lb pork sausage
  • 1 cup pork rinds, crushed (about 2.5 oz)
  • 2 cups shredded Monterrey Jack cheese
  • 3/4 cup salsa
  • 1 egg
  • 1 tsp minced garlic
  • 2 tsp oregano
  • 2 tsp cumin
  • 1 tsp salt
  • 2 tbsp minced onion

Directions

  1. Combine all ingredients in a large bowl

  2. Using clean hands, knead mixture until thoroughly blended

  3. Form into a loaf, 3 inches thick, on a broiler pan

  4. Bake at 350 for 1 hour 20 min
