Egg Muffins

Muffins will keep in the fridge for about a week and freeze well

Prep time: 15 minutes
Cook time: 35 minutes
Serves 12 people

Ingredients

  • 9-12 eggs
  • 2 tsp seasoning (whatever you like with eggs)
  • 1-2 cups shredded cheese
  • 3 green onions, diced
  • cooked and crumbled meat of choice (bacon, sausage, etc)

Directions

  1. Grease muffin tin heavily or line with baking cups

  2. Layer meat, cheese, and onions in the bottom of each muffin cup; each cup should be about 2/3 full

  3. Break eggs into a large bowl, add seasoning and beat well

  4. Pour eggs over muffin tin until each cup is about 3/4 full

  5. Bake at 375 for 25-35 min until muffins have risen and slightly browned and set
