Almond Flour Muffins

basic muffin has 6g carb each

Add-ins:
2 tsp cinnamon
fresh blueberries
3-4 packets sugar-free apple cider mix (reduce sweetener to 1 cup and add 1 tsp cinnamon)

Cook time: 15 minutes
Serves 12 people

Ingredients

  • 3 cups almond flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp butter, melted
  • 2 cup Splenda granular (or equivalent liquid)
  • 2 tsp vanilla
  • 4 tbsp heavy cream
  • 6 tbsp water
  • 4 eggs

Directions

  1. Mix together almond flour, baking powder, salt, and granular Splenda (if using) in a mixing bowl

  2. In another bowl, stir together melted butter, liquid Splenda (if using), vanilla, heavy cream, and water

  3. Add liquid mixture and eggs to dry ingredients and mix well

  4. Spoon the batter into 12 muffins cups; bake at 350 for 15-20 min until tops are golden brown

  5. Remove from pan and cool at least 5 min on a wire rack before serving (to set up)
