Breakfast Lasagna

Ingredients

  • *cream cheese pancakes
  • *4 oz cream cheese
  • *4 eggs
  • *3 packets stevia or other sweetener
  • *1-1/2 tspn cinnamon
  • 8 eggs, scrambled
  • 1 cup shredded cheese (cheddar or colby jack)
  • 12 sausage links, fully cooked OR 1/2 lb to 1 lb ground sausage, fully cooked

Directions

  1. To make cream cheese pancakes, put cream cheese, eggs, sweetener, and cinnamon into blender and blend until smooth; allow batter to rest a couple of minutes before pouring onto a hot skillet sprayed with cooking spray [make oblong pancakes to fit the pan better]

  2. Grease an 8×8 baking pan and lay down 4 pancakes

  3. Put down a layer of scrambled eggs, followed by 1/3 of the cheese, 4 more pancakes, all of the sausage, 1/3 of the cheese, remaining pancakes, remaining eggs, and the rest of the cheese

  4. Bake at 350 for 8-10 min until cheese is melted
