Getting the initial oil temperature to 375 degrees is key to the success of this recipe. An instant-read thermometer with a high upper range is perfect for checking the temperature; a clip-on candy/deep-fry thermometer is also fine. If your Dutch oven measures 11 inches across (as ours does), you will need to fry the steaks in two batches.

Don’t skimp on the marinating time; any less than 3 hours and the chicken won’t be as flavorful or tender. Conversely, marinating for more than 6 hours will make the chicken mushy. Serve with Yogurt-Herb Dipping Sauce (see related recipe).
WHY THIS RECIPE WORKS:
To keep the chicken in our Grilled Chicken Kebabs recipe from drying out, we marinated it in a blend of yogurt, olive oil, garlic, and herbs. The tangy, mildly acidic yogurt tenderized the chicken in our recipe and added valuable flavor—as long as the chicken only marinated for three to six hours. For the vegetable component of our kebabs recipe, we preferred firm vegetables like sweet red onion and red bell pepper. When cut into similarly sized pieces, they cooked evenly and became soft—but not mushy—by the time the chicken was cooked through.
- plain yogurt
- extra virgin olive oil
- dried thyme
- dried oregano
- ground black pepper
- cayenne pepper
- chopped fresh basil
- lemon juice
10 enchiladas, serving 4 or 5
If you prefer, Monterey Jack can be used instead of cheddar, or, for a mellower flavor and creamier texture, try substituting an equal amount of farmers’ cheese.
WHY THIS RECIPE WORKS:
Chicken enchiladas are a complete meal that offers a rich and complex combination of flavors, textures, and ingredients. The problem with preparing enchiladas at home is that traditional cooking methods require a whole day of preparation. We wanted a recipe for an Americanized version of chicken enchiladas that could be made in 90 minutes from start to finish. To save time preparing the tortillas, we sprayed them with vegetable oil spray and warmed them on a baking sheet in the oven. We created a quick chili sauce with onions, garlic, spices, and tomato sauce, and to further enhance the sauce’s flavor, we poached the chicken right in the sauce. This step also made for moist, flavorful meat. And cheddar cheese spiked with canned jalapeños and fresh cilantro made a rich, flavorful filling.

Light coconut milk can be substituted for regular coconut milk. Serve this dish over rice.
WHY THIS RECIPE WORKS:
Adobo is the national dish of the Philippines, and chicken adobo is among the most popular. The dish consists of chicken simmered in a mixture of vinegar, soy sauce, garlic, bay leaves, and black pepper. The problem with most recipes we found was that they were aggressively tart and salty. Our secret to taming both of these elements was coconut milk. The coconut milk’s richness tempered the bracing acidity of the vinegar and masked the briny soy sauce, bringing the sauce into balance.

- bay leaves

Any combination of split breasts and leg quarters can be used in this recipe.
WHY THIS RECIPE WORKS:
To save time and boost flavor, we ditched the original marinade and made a paste of the prunes, olives, capers, garlic, and oregano, which we spread on the chicken and caramelized into the sauce. To boost meatiness and complexity, we added anchovies and pepper flakes and browned the chicken skin in a skillet before baking it through.

We like to serve these fajitas with crumbled queso fresco or feta in addition to the other garnishes listed.
WHY THIS RECIPE WORKS:
To create indoor chicken fajitas that didn’t require a slew of compensatory garnishes to be tasty, we took a fresh look at the key ingredients. For well-charred, juicy chicken we marinated boneless, skinless breasts in a potent mix of smoked paprika, garlic, cumin, cayenne, and sugar before searing them hard on one side and finishing them gently in a low oven. We revamped the usual bland mix of bell pepper and onion by charring poblano chiles and thinly sliced onion, and then cooking them down with cream and lime. Finally, we finish the dish with small amounts of complementary garnishes: pickled radish, queso fresco, and cilantro leaves.
