6/24/2012 – This was very good. Used my Queen of Hearts Raspberry Vinegar that I bought from Cheshire Gardens (Wincester, New Hampshire) online.
- light olive oil or grape seed oil
- raspberry wine vinegar
- honey
- Dijon mustard
- Salt and pepper to taste

Father’s Day 2012 – a great way to use your lettuce from the CSA. Not a neat meal, but tasty. I added a couple of carrots, shredded, and a can of water chesnuts.

You should try this with other vegetables — I made a mistake last time and used mayo instead of sour cream and it came out fine — it also might need 10 minutes more to bake if you use a deeper casserole to bake the potatoes.
